Food

Lately I have been in an experiment kind of mood when it comes to food. I'm just sick of having the same things all the time so I have been trying new recipes.

Last night I tried a pomegranate. I had been having cravings for one since I saw something about pomegranate juice, which is so weird because I had never even tasted one, so how could it be a craving?!

It looks like red see through corn to me. You open it and loosen all the little arils (corn looking things) and put them in a bowl. Luckily there was a little information sheet about them at the store, or I never would have known this. The little arils are filled with juice and a seed. I like the flavor of the juice, but I'm not such a big fan of eating the seed inside. Maybe next time I will just buy the juice instead. On the plus side, I found another fruit that Hayden will eat! He loves them.

So am I the only one who had never tasted a pomegranate? Do you eat them?

Confederate Bean Soup

We both liked this, but were surprised at how sweet it was. It didn't take very much to fill me up.

Mexican Lasagna

His amounts are weird, because he is making a huge huge batch of it. I made it in a 9x13 pan and only used 1lb ground beef, and kind of guessed on the rest of it. It was really good! Derrick said, "I love that you experiement." Next time I make it I will use a more mild salsa verde, because I think that's what was so spicy. I like spicy, but I also get heartburn at 10 am every day, so I have to be careful.

Chili

Yeah, I had never made chili before. This was a good recipe.

And P.S., If you are wondering if my day got better, the answer is not really! HAHA. I can't remember what else happened except that I spilled my entire container of rice on my counter and I am still finding it everywhere in the kitchen. I was also way too tired to keep up with Hayden, so my house has been a huge mess for a couple days. On the upside, Hayden wasn't crying all day (those are the really bad days) and I was able to laugh at pretty much everything. I also think I can get the beads out of the heater vent with the vacuum. Derrick had a bad day, so I just focused on him and how I could make him feel better. I made a nice dinner and we had a good time together playing games and relaxing. It's amazing how when you stop focusing on yourself and start focusing on those that you love, everything just gets better.

I have had pomagrates before but I haven't had any lately. I am going to try and post a recipe in the next few days, because I love to try new food too.

Bart had never heard of pomagranates either, but the other day we bought sprite that is pomagranate flavored for a holiday special and I had to tell him all about them. I like to test the water with new foods as well. It seems like we always have the same old thing and mostly because Bart does not like vegies, so it makes it a little harder. Tammy gave me this and it tastes kind of like chicken enchiladas it is way good.
White Bean Chili
1 tablespoon oil
1 pound of chicken
1 medium onion diced
1 ½ teaspoon garlic powder

Sauté together then add:
1 can chicken broth
2 cans green chilies
2 cans great northern beans (drained)
1 teaspoon salt
½ teaspoon pepper
1 teaspoon cumin
1 teaspoon oregano
¼ teaspoon cayenne pepper
Bring to a boil and simmer for 30 minutes. Just before serving add ½
cup whip cream and 1 cup sour cream.
If desired, serve with grated Parmesan cheese.

I have never had a pomegranate until I moved to St. George. THey are EVERYWHERE!! At thanksgiving my in-laws make Dixie Salad, which includes pomegranate. It's good, I'm a fan. Those recipes sound good! I will post one soon, I don't know, I don't really cook!! I'm sorry about you day with hayden! man, you are stronger than me, it's a good thing you just laugh about it!

ps- did you get new neighbors???

I bought a pomegranate too. Yummy...just extremely messy!

I've had pomegranates before. I like them in Jell-o (my mother in law has a great recipe) and Waldorf salad. I like to eat them on their own too, but not very many at once. Recipes. . . HMMMM I have tons. Remind me and I'll send you a couple in an e-mail.
